This a creamy porridge recipe with coconut and caramelized banana, inspired by the Danish oatmeal tradition, will give you a warm and filling feeling for many hours. It is de perfect start of a busy day to come!
The ingredients – Serves one
The porridge
1/2 cup of rolled oats
1/2 cup of boiled water
1/2 cup of almond or rice milk
A tea spoon of coconut oil (helps the body absorb vitamins and minerals)
A dash of cinnamon (regulates the blood sugar revel)
The topping
1 banana
A table spoon of coconut oil
Almonds
Coconut flakes
Start by stirring the oats and the boiled water in a saucepan, and warm it over a medium heat. When it starts to thicken, add the rice milk, the cinnamon and the coconut oil – this will make it nice and creamy.
In the meanwhile, warm another pan (pancake-pan) over a medium heat and let the coconut oil melt in the pan. Slice the banana in half (over the length) and place the two pieces and the almonds into the pan. Let it sizzle for a few minutes (while turning the banana and almonds around) until it all has a nice, bronzed colour.
Once the oatmeal got the consistency you like (you can always add more water), poar it into a bowl and place the banana and almonds on top. Top it with some coconut flakes for some extra coconut flavour.
