The thing I love most about mornings is breakfast. I always set my alarm a little early so I can take my time to do some exercises and to make myself a nourishing bowl of warm porridge – which I calmly enjoy with some fresh ginger tea on the side. Although I am a real fan of experimenting with different toppings and milk, there is always one standard porridge recipe I seem to sort of stick with when I am a bit more in a hurry or simply just ran out of fancy milk, nuts and fruit. As this basic recipe is so delicious and filling, I’m sharing it with you today. I introduce you: my happy cinnamon porridge – full of goodness and energy!
The ingredients – Serves one
1/2 cup of oats
1/2 cup of boiled water
1/2 cup of rice milk
A tea spoon of coconut oil
A dash of cinnamon
1 banana
A hand full of almonds
A few walnuts
Start by mixing the oats and the boiled water in a saucepan and warm it over a medium heat. When it starts to thicken, add the rice milk, the cinnamon and the coconut oil – this will make it nice and creamy. Once you’ve got it to the consistency you like (you can always add more water), cut the banana into small pieces and add this to the porridge. Keep stiring until the pieces of the banana are one with the substance of the porrdige.
Now you can take offf the heat and poar it into a bowl. Add the almonds and crushed walnuts on top. Enjoy!
